TOAD IN A HOLE
This English classic is delicious for brunch or as an easy dinner. If you don’t have an oven proof frying pan, transfer the browned sausages to a preheated baking dish that has been heated with oil until smoking.
Preheat the oven 200°C.
Whisk together the flour, salt, milk, eggs, mustard and thyme until smooth. Stir through the butter. Refrigerate for at least an hour or overnight. Heat an oven-proof, heavy-based frying pan and add some of the oil or lard.
Add the sausages and brown, then put into the oven with the remaining oil until very hot. Pour around the batter and bake for 35 minutes until the batter has risen up and is golden. Serve immediately with your favourite relish.
1 cup plain flour
1⁄2 teaspoon salt
250 mls milk
1 tablespoon grainy mustard
2 teaspoons chopped thyme leaves
50 grams melted butter
2-3 tablespoons vegetable oil or lard
1 packet of your favourite pork or beef sausages
