Sometimes, a lightly creamy salad is all you need, especially when it has a hint of smoke from this luscious mozzarella. Not essential, but very delicious, is the crunch provided by The Baron’s Sea Salt Corn Nibbles.
Grated zest and juice of 1 lemon
3 Tbsp crème fraîche
1 Tbsp extra virgin olive oil
1 fennel bulb
1 bag Garden Fresh Watercress Mix
1 punnet Massimo’s Smoked Mozzarella
2-3 Tbsp The Baron’s Sea Salt Corn Nibbles
Place the lemon zest and half the lemon juice in a small bowl. Add the crème fraîche, olive oil, and 1-2 tablespoons of water to loosen. Stir until it reaches the consistency of lightly thickened cream. Season with salt and pepper and set aside
Fill a separate bowl with icy water and add the remaining lemon juice. Finely slice the fennel – a mandolin is ideal here – and drop it into the water to stop it discolouring
To serve, toss the watercress mix and drained fennel through the dressing and transfer to a serving platter
Roughly tear the mozzarella and scatter it across the salad, then sprinkle over the corn nibbles
