

Watercress, Shaved Fennel and Smoked Mozzarella Salad
Sometimes, a lightly creamy salad is all you need, especially when it has a hint of smoke from this luscious mozzarella. Not essential, but very delicious, is the crunch provided by The Baron’s Sea Salt Corn Nibbles.
Method
Place the lemon zest and half the lemon juice in a small bowl. Add the crème fraîche, olive oil, and 1-2 tablespoons of water to loosen. Stir until it reaches the consistency of lightly thickened cream. Season with salt and pepper and set aside.
Fill a separate bowl with icy water and add the remaining lemon juice. Finely slice the fennel – a mandolin is ideal here – and drop it into the water to stop it discolouring.
To serve, toss the watercress mix and drained fennel through the dressing and transfer to a serving platter. Roughly tear the mozzarella and scatter it across the salad, then sprinkle over the corn nibbles.

Grated zest and juice of 1 lemon
3 Tbsp crème fraîche
1 Tbsp extra virgin olive oil
1 fennel bulb
1 bag Garden Fresh Watercress Mix
1 punnet Massimo’s Smoked Mozzarella
2-3 Tbsp The Baron’s Sea Salt Corn Nibbles
