This gorgeous watermelon and cucumber salad is a refreshing addition to any big spread! Add a good pinch of chilli flakes for fresh, sweet, and spicy spin.
1 red onion, thinly sliced
1 teaspoon sea salt
1 teaspoon sugar
¼ cup white wine vinegar
3cm piece ginger, peeled and finely grated
2 tablespoons maple syrup
2 limes, grated zest and juice
¼ watermelon
1 cucumber
2 tablespoons toasted sesame seeds
Put the onion in a bowl, mix with the salt, sugar and vinegar and set aside to soften for 20 mins, stirring occasionally
Mix together the ginger, maple syrup, lime zest and juice
Remove and discard the rind from the watermelon and cut the flesh into bite-sized cubes
Cut the cucumber in quarters lengthwise, remove the seeds and cut into similar sized cubes as the watermelon. Toss with the dressing and season with salt and pepper
Put into a serving bowl and scatter over the strained, pickled red onions and toasted sesame seeds
